Increasing importance of food allergies

Allergies cause more and more health problems. As far as the generally known food allergy with immediate reaction (type I allergy is concerned, approx. 2% of the population are effected. it is estimated, however, that up to 40 % of the population have a delayed allergic reaction (Type III) to food. This allergic reaction occurs not until a few hours to days after the food was consumed. The delay makes it more difficult for patients and doctors to find out if and what food could be considered a cause of the health problems.

This leads to the development of immune complexes which can settle in different tissues, organs and vascular systems. immune complexes are dissimilated by an inflamatory reaction. If this recurs frequently it can lead to chronic process.

Many chronic complaints can ve caused by such inflamatory reaction, particularly if no cause is found for the inflammation by classical diagnosis it is quite probale that certain foods could be the cause for health problems:
